For me, there are only a few scenarios where sticky fingers are a good thing: When I’m eating them Frozen Peanut Butter Protein S’mores, Sticky Sesame Garlic Ribs…and this high-protein monkey bread! Hey hey. It’s so easy to make and so easy to eat, making it a perfect addition to any brunch spread or dessert table.
Drizzle it with our Cream Cheese Cottage Cheese Glaze, and separate each chewy piece. Oh my god, this is awesome.
- Blended 2% Cheese: To blend the cheese, simply add it to a blender or food processor and blend until smooth. This adds protein and moisture to the monkey bread. You may also be using it in glazes 😃
- Melted Unsalted Butter: It adds sweetness and flavor to the bread while the cinnamon helps the sugar stick to the dough.
- Brown sugar: We used brown sugar in place of white sugar for a deeper and richer flavor.

Greek yogurt can be used in place of blended cheese. This will change the texture slightly, but it will still add the needed protein to this high-protein monkey bread recipe.

For the air fryer, we recommend using a round parchment paper insert. If you don’t have one, you may need to layer two pieces of paper to create the shape of the bowl.

Preheat air fryer to 300℉.

Combine yogurt, flour, baking powder and sea salt in a large bowl. Using a silicone or wooden spoon, stir until mixed. Then, using your hands, press together until a ball is formed.

Transfer dough to a floured work surface. Knead together until smooth. You may need to sprinkle more flour on top, so that it is not overly sticky.

Divide the dough into 4 equal pieces. Roll into a log about 6 inches long. Cut each log into 5 pieces. Roll each piece into a ball. Cancel.

Place the brown sugar and cinnamon in a small bowl and whisk to combine.

Roll each pretzel ball in melted butter, then dip in cinnamon sugar. Cancel.

Line the air fryer with parchment paper. We suggest inserting round parchment paper. If you don’t have one, you may need to layer two pieces of paper to create the shape of the bowl. Place all the balls in the insert. They might be touching.

Air fry for 20 to 25 minutes. When they are cooked there will be a little liquid at the bottom. This is the process of melting brown sugar.

Make the frosting: While the monkey bread is cooking, add all the ingredients to a bowl and use an electric mixer to mix the ingredients together. Make sure the cream cheese is softened, otherwise you will have lumpy frosting.

Let rest for 10 minutes before serving with frosting. You can drizzle the frosting over the monkey bread or use it as a dip.
