“Kubz” bread, also known as Kimaj, is an Arabic flatbread or beaten bread. It is a predominant in the Middle East, and is used as a versatile compatible for various recipes or as a wrap for sandwich.
Kubez is usually round and flat with a soft and chewing texture. The dough is rolled in a thin round and cooked at a high temperature, causing it to puff and makes a pocket inside, perfect for stuffing with vegetables, spreads or dips.
I have used 100% All-Purpose Flour for this recipe, but feel free to experiment with a mixture of all-pests and whole wheat flour if you want. The results will be equally spectacular.
This bread can be stored and heated later, either wrapping it in foil and heating it in the oven or quickly toasting it under the broiler or on the stovetop.
