This chef is the brain yield of Fabian Leone, who wanted to open a place where enthusiasts could enjoy classic bakery items without compromising on tastes about allergies, intolerance or generally healthy food.

“They defined the origin as some natural, ancestral, traditional and biological. Conversely, the future was associated with innovation, technology and dreams.”

To catch this duality, the studio has presented the interior of the bakery to look like an old cave.

The walls and window frames are rounded with plasterboard, then covered in a layer of lime washing.

Meanwhile, the furniture is designed to look more modern.

The center of the space is a curve stainless steel table supported by two thin legs, on the other hand, by a hump of Cragi rock which was sour from a mine close to the studio Madrid.

Thin steel cabinets displaying roti rotis are also fitted in Niches in the walls.

“Every curve, texture, and source of light are carefully designed to embrace a dialogue between the ancestral and the future,” said Israin Sera.
