We are on a full roll with cottage cheese mixed cottage cheese here in Fit Foody Kitchen, and these carrot cake muffins are our latest passions. They are super moist and tasty – you’re going to love protein stressal topping and sweet cheese cheese dripping exactly
This muffin batter is thicker than your average muffin batsman: The batsman has a stability similar to a thick pancake batsman. It should be easy to stir, but not sinkable. If the batsman sounds very thick and sticky, add 1 tbsp of almond milk at a time until the batsman is easy to stir.
Do not leave the moisture from chopped carrots: To do this, place the chopped carrot in a paper towel or tea towel. Fold the towel on the sink to issue moisture.
Choosing the right oil: If you do not have avocado oil, we also tested this recipe with coconut oil. It did a great job.
Each muffin packs 7 grams of protein for these protein-rich ingredients:
- protein powder: We used vanilla protein powder in Streusel Topping.
- Mixed cottage cheese: Both of you will find mixed cottage cheese in both muffin batsman and maple cottage cheese.
- Eggs: You need 2 eggs in this muffin batsman.
- Oats: Amazing texture in rolled oats pack protein and stressel topping.

Allow the muffin to cool down completely and store in an airtight container for 3 days in a cool, dark place. Or, store in the fridge for 5 days.
Can you freeze these muffins?
It is super simple to freeze these muffins. As long as you are frozen and melt them, we recommend catching them on glazing:
- Allow the muffin to cool down completely.
- Place a freezer in a safe bag, and sealed.
- Freeze for 3 months.

Preheat the oven at 350 ℉ and line a muffin tin with paper liner. Cancel.

Prepare Streusel Topping. Add the rolled oats, flour, protein powder, brown sugar, walnuts, butter, maple syrup, cinnamon, and vanilla extracts in the mixing bowl. Use a fork and cut the material together until a crumbly texture is formed. This may take a few minutes. Set separate for the latter.

Remove any excess moisture from the chopped carrots in a paper towel or tea towel. Fold the towel on the sink to issue moisture.

Next, add flour, baking powder, cinnamon, ginger, cloves, nutmeg, salt, and carrots to a bowl and mix together. Cancel.

In a separate bowl, mix wet ingredients.

Gently add dry material to the wet and shake using rubber spatula until joint.

Scoop 3 tablespoons batsmen in each line muffin. Then, top each muffin with 1-2 tablespoons stressel topping.

Bake the muffin for 18 minutes. Remove the muffin from the oven if the toothpick inserted in the middle comes out.

Allow the cake to cool for 10 minutes. Mix cottage cheese dripping in a bowl.

Remove the cake from the baking dish and serve with cottage cheese.
