Elements of our curry pot pie
- Cock: We used chicken thighs, but you can also use chicken breasts.
- Curry Flavor: Curry powder is the star of the show here, but you will also need garlic, fresh lemon juice and a little hot sauce (we ❤ franks!).
- Veggies: We are using a combination of creamy yucon gold potatoes, carrots, onions and frozen peas.
- Milk + butter: Helps to thicken filling and adds a creamy, rich texture.
- Store-Kharida Puff Pastry: There is no need to finish things here! A store-Kharida crust saves time and effort, but if you are feeling super ambitious then you feel free to make your own pastry with scratches!
We recommend using the stores-fed puff pastry for the texture of our flaky, butter, which tastes such a good pair with curry. You can find them in the frozen food section in most grocers. You can also use a pie crust for this recipe.
Add swap or veggie
You can use a mixture of various vegetables for this recipe! Here are some ideas that will add well with curry flavor:

Prepare chicken thighs by seasoning them with curry powder, sea salt, ground ginger and pepper.

Cook the chicken thighs in the air fryer at 380 Thef for 10 minutes or bake them in the oven at 400.F for 20-25 minutes. Remove and cut the chicken. Cancel.

Heat olive oil in a large pot on medium/high heat. Add onion, carrots, and ½ teaspoon salt. Sauate and then add garlic for 3-4 minutes. Cook for another 2-3 minutes. Add and toss peas.

Bottom heat for medium heat and add butter. When the butter melts, add the dough. Stir the material together. A paste should be made. Cook for about 1 minute.

Gently pour 1.5 cups in the milk pot and become thick.

Remove utensils from heat, add curry powder, lemon juice and hot sauce to the pot, and shake. Add chopped chicken and potatoes and toss. Ensure that all vegetables are coated in sauce. Add the remaining milk and stir. Transfer the mixture to a pie pan.

Cover the pan with puff pastry and pin the edges so that no sauce is leaked. Score at the top of the puff pastry.

Brush the top of the pie with egg wash, move to the oven, and bake until golden brown for 40-50 minutes or up to the top of the pie.
