This salad is easy to keep together and is perfect for a quick dinner in a meeting or at home. There are many variations that you can try on your preferences and what is in the season. Let me know how you like it!
Yield: 6 servings
you will need: Baking sheets, small utensils, large mixing bowl, whistle, green, spoon and cup, knife, cutting board
key: T = spoon; tsp = spoon
Material:
- 1 cup quinoa, rinsed
- 1 lb chicken breasts
- Salt and pepper
- 1 lemon, juice and enthusiasm
- 1/4 cup olive oil
- 1/4 cup dijon mustard
- 3 t honey
- 3 t apple cider vinegar
- 1 large bunch broccoli (about 1½ pounds)
- 1 medium apple
- 1/2 cup dried cranberry
- 4 Ocens goat cheese, feta or cheese of your choice (optional)
Instruction:
- Preheat the oven at 350. Slice the chicken into small, even shaped pieces and arranged on a baking sheet. Sprinkle with salt and pepper, and bake for 20 minutes.
- When you get chicken in the oven, according to the package instructions, cook the quinoa on the stovetop.
- While chicken is baking and cooking Quinoa, dressing. In a large mixing bowl, grind lemon enthusiasm, and then cut the lemon in half to add juice. Add olive oil, mustard, honey and apple cider vinegar and whisk to combine. Season with salt and pepper to taste.
- Peel the stem of the broccoli and trim any dry ends. Cut the fine broccoli and add it to the dressing. Cut the apple into the core and small pieces, and mix it with a broccoli mixture.
- The cooked quinoa and cooked chicken (you can cut it more finely) to the broccoli and apple mixture can add, and toss to combine. Add cranberry and cheese.
- Mix everything together and serve. Refreement Store.
