Material:

  • 2 t olive oil
  • 3 medium or 2 large sweet sweet sweet potato, peel and 1/4 inch pieces diced
  • 1/2 red onion or 2-3 shallots
  • 2 teaspoon minced garlic
  • 1 t mined ginger
  • 1.25 lbs ground chicken
  • 2/3 cup without thinking -Coconut milk (light)
  • 4-6 cup baby spinach
  • 3 lemon, juice
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instruction:

  1. Heat a large pan on medium heat with 1 T olive oil. Add sweet potato and weather with salt and pepper, stirring to coat evenly. Cover and cook, sometimes stirring. Alternative: After 5-6 minutes, add 1/2 cup of water to the pan and allow the steam to complete the sweet potato cooking. Once cooked, move them to a plate.
  2. Add the remaining 1 T olive oil to the warm pan and add onion, garlic and ginger. Stir to combine in short, then add chicken. Break meat, and weather with salt and pepper. Allow it to cook until it is pink.
  3. Stir in coconut milk and add sweet potato back. Bring the mixture into a low boil, and cook until the mixture decreases slightly (2-3 minutes).
  4. Stir in spinach until it is delayed. Add the previous lime juice and sealantro, and add no extra salt and pepper to the taste. Remove from heat and serve.
