Material:

  • 2 T Extra-Warin Olive Oil
  • 1 lb ground chicken or turkey
  • Salt and pepper
  • 1.5 teaspoon ground coriander
  • 4 garlic cloves, roughly chopped
  • 2 celery stalks, half length, then ½-inch thick chopped
  • 1 big carrot, peeling and cut in ½-inch cubes
  • 1 large shallot, finely chopped
  • 1 t fresh thyme leaves (or 1 teaspoon dried parsley
  • 1 t fresh rosemary (or 1 teaspoon dried)
  • 8 cup chicken stock, as well as more as required
  • 1 cup arborio rice (or you like any rice)

Instruction:

  1. In a large pot, heat 1 tbsp of oil on medium-high. Add the meat of the ground, generously weather with salt and pepper, and cook, break with a wooden spoon, until it is uprooted for about 3 minutes.

  6. Add the turkey back to the pot, and heat it until any accumulated juice becomes hot, then the weather to taste with salt and pepper.
