Start by preparing the meatballs. In a bowl, add ground chicken, 1 tablespoon olive oil, egg, Parmesan cheese, mozzarella cheese, bread crumbs, Italian seasoning, and salt. Mix the ingredients gently with a wooden spoon.

Take about 1.5 tablespoons of the meat mixture in your hands and form a ball between your hands. Set on a plate. Repeat until all meatballs are made, about 18.

Heat the remaining olive oil in a large skillet over medium/high heat. When the oil is hot, add the meatballs to the pan and cook until brown on all sides. Don’t cook the meatballs all the way through, this will happen later. Remove meatballs from pan.

Add onion to the pan and a pinch of salt. Fry for 2-3 minutes. Add the garlic and sauté for an additional 2 minutes or until the garlic becomes fragrant.

Deglaze the same pan with red wine. Scrape up browned bits from bottom of pan with spatula.

Add Italian seasoning, tomato sauce, chopped tomatoes, balsamic vinegar and remaining salt. Stir and bring to a gentle simmer.

Add the meatballs back to the boiling sauce in the pan. Make sure the meatballs are coated in the sauce. Cook over low heat for 5-10 minutes or until the internal temperature of the meatballs reaches 165ºF.

Turn the oven on to roast and prepare the toppings. Add mozzarella, panko bread crumbs and Italian seasoning to a bowl and mix.

While the meatballs are cooking, remove them from the heat and top with the cheese mixture. Place in the oven and roast for 2-4 minutes (depending on the oven) until golden brown.

Remove the meatballs from the oven and serve as is with crostini or over pasta.
