Material:

  • 1 teaspoon oil, olive or avocado
  • 1 small onion (1/2 cup), chopped
  • 1 large carrot (1/4 cup), chopped
  • 12 oz additional firm Tofu, Cubed
  • 1 teaspoon, chili powder
  • 1/2 teaspoon ground cumin
  • 2-3 cup vegetable stock
  • 1 cup salsa
  • 1 t tomato paste
  • 1 medium zucchin (1-1 1/4 cup), chopped
  • 1/8 cup cilantro or parsley rough
  • 6 ounces canned black beans, rinsed and dried
  • Salt and pepper to taste

Alternative Topping: Lime squeezed, chopped sitaphal, chopped red onion, chopped waterpil chili, crushed tortilla chips, sour cream

Instruction:

  1. In a medium -sized pot, heat oil on medium high heat. Add onion, and carrots. Cook until soft, about 5 minutes.
  2. Add tofu, zucchini, chili powder and cumin and sauce for 1-2 minutes.
  3. Add vegetable stock, salsa, tomato paste, sealantro and black beans.
  4. To bring a boil on moderate low heat. Cook for 15-20 minutes until the vegetables are tender.
  5. Serve in the top and bowl with the weather for taste, alternative topping.
