I can’t count how many times I’ve made this Crock Pot Pork Roast. My family requests it and I always do it. They love that it’s a complete meal in one dish – juicy, tender pork roast and steamed root vegetables.

What you need for our slow cooker pork roast

Our Crock Pot Pork Roast is made with a Boneless Pork Shoulder, A Homemade Pork Dry Rub, and a mixture of hearty root vegetables like carrots and potatoes.

The roast is cooked in a flavorful liquid made from balsamic vinegar, red wine, and chicken broth, which then turns into a delicious gravy.

We recommend boneless pork or pork butt.

We’ve tried this recipe with thinner cuts of pork such as pork loin and it just doesn’t taste the same. To “pull it off the bone” you actually need the fat from the pork. Trust us.

Some tips on how to make pork roast in a slow cooker

  • Be generous with spices.
  • While cutting vegetables, keep in mind that all the vegetables are cut in the same size so that they cook evenly.
  • We sear the pork shoulder on all sides before placing it in the slow cooker. When you do this, make sure the olive oil in your cast iron pan is hot. We’re going for a quick find that will brown the meat perfectly.
  • We recommend cooking your pork shoulder in a crock pot High for 6-8 hours.

Options and Variations

  • pork: We recommend using a boneless pork shoulder For this recipe. It breaks easily and loses its flavor. Pork butt will also work. However, if you have another piece of pork that you want to use, go ahead and use it. It may not cut as well as before, but it will taste delicious. Just make sure it’s about 3 pounds.
  • Vegetables: Try using sweet potatoes, onions, garlic, fennel, or rutabagas.
  • red wine: If you don’t have red wine, you can definitely use more chicken broth.

Do I need to add liquid to pork in slow cooker?

Yes, we recommend adding liquid to the pork in the slow cooker! This creates a delicious gravy and adds moisture to the cooking environment to keep the pork nice and moist.

Can you cook pork roast too long in Crock Pot?

It’s hard to overcook pork roast! A sweet spot is when the pork becomes tender and falls off the bone. What happens? Keep an eye on the pork before it gets too soft!

To store this slow cooker pork roast, let the pork cool completely before placing it in an airtight container. You can keep pork roast in the refrigerator for up to 7 days!

What goes with pork roast?

Pork roast goes well with just about anything! This is a heavier meal, so pairing it with something lighter is always a good idea! Here’s our favorite pairing with this slow cooker pork roast!

  • First, prepare your pork dry rub by mixing all the spices together in a small bowl. Cancel.

  • Then prepare the vegetables. Cut 6 russet potatoes into quarters, dice one white onion, cut 6 medium carrots into 4 pieces, and roughly chop 4 cloves of garlic.

  • Place the veggie medley in the bottom of your crockpot.

  • Next, rub your pork shoulder roast with a dry rub. Make sure every nook and cranny is covered with the scrub.

  • Heat about 2 tablespoons olive oil in a large cast iron skillet over medium/high heat. When the olive oil is fragrant, sear the pork shoulder for 2 minutes on each side.

  • Then, place the pork roast in the crock pot on top of the vegetables. Make sure to scrape down the pan to get all the delicious bits that have rubbed off and add that to the crock pot as well.

  • Use baker’s twine to tie the thyme and rosemary together to form an herb bundle and place it on top of the pork.

  • Next, in a large Pyrex, whisk together the balsamic vinegar, red wine, and chicken broth. Then, pour it over the pork roast.

  • Cover the crock pot and turn it to high. Let cook for about 6-8 hours (if you can, turn the pork roast halfway through the cooking time if you can’t be bothered!).

  • Remove meat and vegetables from crockpot and discard bundle of herbs. Using two forks, separate the pork roast into pieces and set aside.

  • Place remaining 1/2 cup liquid in crockpot into microwave-safe Pyrex. Beat in cornstarch. Place the cornstarch mixture in the microwave for 45 seconds (the mixture should resemble thick gelatin). Remove from the microwave and whisk the cornstarch mixture into the existing liquid in the crockpot until it thickens into a thin gravy.

  • Return the pork and vegetables to the crockpot or place it on a plate and coat everything in the gravy and stir to combine.

  • If you already have our Homemade Pork Dry Rub, use about 1/2 cup of rub for a 3 pound piece of meat.
  • Gravy: If you like more gravy, feel free to double the gravy ingredients (balsamic vinegar, red wine, and chicken broth).
  • cinnamon: We love how a little cinnamon can really amp up the flavor in this Crock Pot Pork Roast. If you don’t like cinnamon, feel free to omit it.
