Peanut Butter Protein Donuts with Chocolate Protein Frosting

Once I realized how easy it was to make donuts, we became a bit of a donut fanatic (learn about us). Banana Bread Donuts, Apple Cider Donuts, Baked Pumpkin Donuts!) But then we started wondering, what if we could increase protein? We haven’t looked back since then. These Chocolate Peanut Butter Protein Donuts are moist, fluffy, and sweet.

  • all purpose flour: What work goes into a perfect textured donut.
  • PB2, A low-calorie, protein-rich alternative to traditional peanut butter with the same great taste.
  • light brown sugar: Gives these protein donuts a classic sweet taste.
  • Maple syrup: Provides natural sweetness and adds moisture to donuts.
  • Eggs: Adds protein and helps bind the ingredients together.
  • Almond Milk: Use unsweetened, plain almond milk so it doesn’t overpower the other flavors of the donuts.
  • Melted Coconut Oil: You’ll need it for both the batter and chocolate glaze.
  • cocoa powder: You’ll also need it for the chocolate glaze!

  • Donut Pan: This recipe is designed specifically for donuts, so be sure to have a donut pan on hand.
  • wire rack: To cool your donuts and allow excess glaze to drip off.

We do not recommend substituting real peanut butter for PB2. PB2 is defatted peanut powder, which means it has less calories and fat than regular peanut butter. It has a more intense peanut flavor, making it perfect for baking and adding to protein donut batter!

If you don’t have a donut pan, you can use a muffin tin.

Make this alternative frosting!

Don’t have cocoa powder for frosting? Here’s an alternative that uses chocolate chips instead:

  • ¾ cup chocolate chips
  • 3 tbsp PB2
  • 1 tablespoon coconut oil

Add all the ingredients to a microwave safe bowl and heat in 20 second intervals, stirring between each interval. When the chocolate becomes smooth and shiny it is ready. If the glaze is too thick, add another tablespoon of coconut oil.

Top Tips for the Best Protein Donuts

  • Baking time may vary Depending on oven, donut pan and height. Check donuts with a toothpick and adjust baking time as needed.
  • Be sure not to leave the donuts in the donut pan for more than 5 minutes after removing from the oven, otherwise they may overbake. You don’t want dry donuts!

  • Preheat oven to 350℉ and spray donut pan with cooking spray.

  • Place all the dry ingredients in a bowl and mix to combine.

  • Add all the wet ingredients, except coconut oil, to a separate bowl and mix.

  • Gradually add the dry ingredients to the wet ingredients. Once combined, add the coconut oil to the batter.

  • Pour the batter into a piping bag and pour it into the donut pan.

  • Bake for 10 minutes or until a toothpick inserted comes out clean.

  • Remove from oven and cool for 5 minutes, then transfer to a wire rack.

  • While the donuts are cooling, make the glaze. Add the PB2, cocoa powder and melted coconut oil to a bowl and stir to combine. Add water 1 tablespoon at a time to desired consistency.

  • Dip donuts in chocolate and return to wire rack to harden.

  • We do not recommend substituting real peanut butter for PB2.
  • Baking time may vary depending on oven, donut pan, and altitude.
  • Be sure not to leave the donuts in the donut pan for more than 5 minutes after removing from the oven, or they may overbake.

Optional Frosting: To make an alternative frosting without cocoa powder, aAdd all the ingredients below to a microwave safe bowl and heat in 20 second intervals, stirring between each interval. When the chocolate is smooth and shiny, it is ready. If the glaze is too thick, add another tablespoon of coconut oil. Dip donuts in frosting, drizzle over top, and serve.
