Heat a large pan on high heat and add breakfast sausage. Break breakfast sausages into small pieces and partly cook.

Add onion, garlic, chilli, 1 tbsp olive oil, Italian spice, and saul spoon salt to the sausage. Toss the mixture and begins to soften the additional 5 minutes or until the chili begins to soft.

Transfer the sausage and vegetable mixture to a baking dish and toss with croisain to combine.

Crack all the eggs in a large bowl and whisk together with chone spoon salt, pepper, cheese and half and half. Pour the mixture into the baking dish and shake to combine.
